White Bean and Avocado Italian Herb Salad

This week’s Sunday Supper is a fresh, satisfying Avocado & White Bean Salad from our good friends at Avocados – Love One Today®. Creamy avocado and hearty white beans are tossed with crunchy sunflower seeds, fresh herbs and a bright tahini-lemon dressing for a simple summer dish packed with flavor and texture.
Packed with fiber and healthy fats, it’s a nourishing option that works equally well as a light lunch or a side for your summer table.

Ingredients
- 1 (15oz) can white beans, drained & rinsed
- 1 (14oz) can hearts of palm, sliced into ½ inch rounds
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 4 Tbsp. sunflower seeds (Ground in a FinaMill Grater Pod)
- 3/4 cup dried basil (Ground in a FinaMill Dried Herbs+ Pod)
- 3/4 cup dried parsley (Ground in a FinaMill Dried Herbs+ Pod)
- 1 tsp. dried thyme (Ground in a FinaMill Dried Herbs+ Pod)
- 2 Tbsp. tahini
- 1/2 lemon, juiced (about 1 Tbsp.)
- 1 Tbsp. apple cider vinegar
- 2 Tbsp. olive oil
- Sea salt & black pepper, to taste (Salt Ground in a FinaMill Everyday Pod and black pepper in the FinaMill Pepper Pod)
Directions
The Finished Salad:
Prepare the Ingredients
- Drain and rinse white beans. Add to a large mixing bowl with sunflower seeds.
- Slice hearts of palm into ½-inch rounds and dice avocado and add.
- Grind the basil and parsley, then add them to the bowl.
Make the Dressing
- In a small bowl, whisk together dried thyme, apple cider vinegar, lemon juice, olive oil, and tahini.
- Add sea salt and black pepper to taste.
Assemble the Salad
- Pour the dressing over the salad and toss gently until everything is well coated.
- Serve immediately or let sit for 5 minutes to allow flavors to meld together.
