Montreal Seasoned Hanger Steak

Fire up the grill for a steakhouse-worthy Sunday Supper featuring one of beef's best-kept secrets: the hanger steak. Often called the "butcher's steak," this flavorful, well-marbled cut was once reserved by butchers for themselves because of its exceptional tenderness and rich, velvety beef flavor.
In this recipe, we elevate the hanger steak with a freshly ground homemade Montreal steak seasoning that creates a bold, savory crust while allowing the natural flavor of the beef to shine. Thanks to its beautiful marbling, hanger steak absorbs seasoning exceptionally well, making every bite juicy and packed with flavor.
Serve it alongside oven-roasted thyme fingerling potatoes, grilled asparagus, and a simple microgreen salad with balsamic vinaigrette for a complete meal that's perfect for summer entertaining or an easy weekend dinner.

Ingredients for the Montreal steak seasoning spice blend:
- 2 ¼ tsp course Kosher Salt
- 2 ¼ tsp black peppercorns (Used here: FinaMill Black Peppercorn)
- 2 ¼ tsp dried minced or granulated garlic (Used here: Burlap & Barrel’s Granulated Garlic)
- 2 ¼ tsp dried minced onion (Used here: Burlap & Barrel’s Minced Onion)
- 1 ½ tsp coriander seed
- 1 ½ tsp dill seed
- 1 ½ tsp dried red pepper flakes
Combine all spice blend ingredients together in the Everyday Pod.

- 2 hanger steaks (1 – 1 ½ pound)
- 2 Tbsp olive oil
Directions:
The Finished Dish:
- Prep the hanger steak by cutting off any silver white membrane or center seam if present. You will often find cuts with it already removed or you can ask your butcher to remove it for you.
- Place your hanger steak strips on a layer of parchment paper inside a shallow container.
- Score the steaks against the grain on both sides to allow for a deeper flavor infusion.
- Drizzle the olive oil over the steak and use a cooking brush to coat each piece. Flip the steaks to lightly coat both sides.
- Load the salt and all of the spices for the Montreal steak spice blend into a FinaMill Everyday Pod. Then using your FinaMill, give both sides of each steak a good coat of the seasoning
- Cover the container and let rest at room temperature for 10 - 20 minutes to allow seasoning to marinate.
- Heat your grill on low, to medium heat.
- Transfer steaks to the grill and cook for 6-8 minutes for each side. Flip and repeat to your preferred level of doneness.
- Transfer steaks to a cutting board or clean flat surface and let rest for 5 minutes.
- Slice steak against the grain and plate alongside your favorite sides.
Chef’s Tips:
If you are preparing ahead, it's better to let the Montreal seasoned hanger steak marinate in the refrigerator for 2-6 hours before grilling.
For an extra finishing touch, remove the steaks from the grill when done and heat up the grill to high. When at temperature, place the steaks back on the grill to sear the outside for about 2-3 minutes per side.
