Most of the world’s surface is covered in water and within that water are some of the tastiest creatures. If you’ve ever visited the coastline and had some fresh catch of the day you know that there are few things better in this world. 
A generation ago in the west, things like Sushi were unheard of, or at the very least a strange and foreign delicacy. Today we have Sushi in almost every town, and America has made its mark on the cuisine. Things like salmon and cream cheese are not something that you’d find in Japan. Most people fall in love first with a California roll, again, something that isn’t really found in Japan.
Seafood traditionally includes anything from the ocean that we might eat, but it has grown to include freshwater fare also. Fishing is one of the great pass times and is the best way to connect with nature and family, all the while hopefully catching some tasty dinner.

Equipment


Ingredients


  • Fillet of Salmon deboned
  • butter
  • onion
  • lemon

Method


Preperation:

  1. Let the salmon sit on the counter for 20 to 30 minutes to bring it up to room temperature
  2. Pat dry with a papertowl
  3. Use butter, cooking oil, or cooking spray to cover the tinfoil, place fillet on top skin side down
  4. Season using the FinaMill. First use the salt pod and apply. Change to the pepper and dried dill pods and coat evenly with both.
  5. Place 4 pads of butter (one tablespoon each) evenly along the length of the salmon
  6. Place sliced onions and sliced lemon evenly spaced on top of the salmon fillet
  7. Wrap the fillet tightly with the tinfoil to keep juices in.

Cooking Directions

  1. Place on baking tray
  2. Bake at 400 degrees F for 12 to 15 minutes depending on thickness.
  3. Remove before internal temperature reaches 140 as the meat will continue to cook after it is removed.
  4. Remove lemon slices and serve.

Everyone knows that fish is very good for us. It is low in fat and full of protein. Healthy food can also be delicious! We love cod because it is a light flaky fish and is very easy to cook. We put together a recipe that puts the salty umami goodness of parmesan cheese forward. This dish is sure to be a pleaser for the family.

Ingredients


  • 2 pieces of Cod or fish fillets of choice
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon paprika
  • 1 teaspoon dried parsley flakes

Method


  1. Preheat the oven to 350 degrees F.
  2. In a shallow bowl, come the cheese, pepper from the FinaMill, paprika, and parsley. Mix together well.
  3. On the fish fillets, rub the oil on both sides.
  4. Place each fillet into the shallow bowl with the dry ingredients and coat both sides of both fillets. Transfer to a baking tray and let sit for 10 minutes.
  5. Bake in the oven for 12 to 15 minutes.
  6. Serve with your choice of sides.

It is a reminder of home and the love that food can bring between people. The following recipe is great because it cooks up so fast, and is a very satisfying meal. The creamy sauce goes perfectly with the freshness and slight salty taste of the seafood.

  • 8 ounces fettuccini
  • 10 ounces imitation crab meat
  • 5 ounces frozen cooked salad shrimp, peeled and deveined
  • 2 tablespoons butter
  • 1 teaspoon fresh ground garlic salt
  • 1/8 teaspoon fresh ground black pepper
  • 11/2 cups heavy cream
  • ¼ cup grated Parmesan cheese

For the Topping:

  • 1 cup dark chocolate chips
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon powered sugar
  • 1/4 teaspoon cayenne pepper

Method


  1. In a large pot, bring some lightly salted water to a boil.
  2. Add the fettuccini. Let cook for 8 to 10 minutes or until al dente. Drain.
  3. Add crab meat, shrimp, and butter to a large skillet and cook until the crab meat is cooked through and the shrimp is pink.
  4. Season the crab meat and shrimp with a bit of garlic salt and ground black pepper using your FinaMill to grind them fresh.
  5. Add the heavy cream. Stir frequently until you get a thick consistency.
  6. Add the Parmesan cheese.
  7. Pour the seafood and sauce over the fettuccini and serve.

Shrimp Scampi

With a delicious burst of freshness from the lemon zest you get the perfect balance to the richness of the pasta and butter. This dish is quick and relatively easy to make, we’ve put together a recipe to try at home.

Ingredients


  • 8 ounces of pasta of choice, such as linguine, spaghetti, angel hair, etc.
  • 1 lb medium-sized shrimp, peeled and deveined
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • ¼ cup white wine
  • ¼ teaspoon or more, to taste, crushed red pepper flakes
  • ¼ cup lemon juice, preferably freshly-squeezed
  • fresh zest from 1 lemon
  • 2 tablespoons fresh parsley leaves, chopped
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • ¼ cup grated Parmesan cheese, optional

Method


  1. Using the large pot, cook the pasta according to package instructions. Drain well.
  2. Meanwhile, place the butter in a large skillet and melt over medium high heat.
  3. Add the shrimp, along with the garlic and red pepper flakes. Grind the red pepper flakes with your FinaMill. Cool for 2 to 3 minutes, until the shrimp is pink, stirring occasionally.
  4. Add the wine and lemon juice and give it a few more stirs.
  5. Season the sauce with the salt and pepper using your FinaMill.
  6. Reduce heat and let simmer for a few minutes.
  7. Remove from heat and stir in the pasta, lemon zest, and parsley.
  8. Garnish with Parmesan cheese, if using.
