Wiggly Worms & Eyeballs

It's Halloween, and getting the kids to eat a good meal when they're focused on Trick-or-Treating requires food that matches the mood! This week’s Sunday Supper is Wiggly Worms & Eyeballs, an easy-to-make, but healthy, spooky spaghetti and turkey meatballs recipe. So boil the cauldron, conjure up the meatballs, and create the creepy eyes! Happy Halloween from our family to yours.

A Spooky Spaghetti with Turkey Meatballs Recipe (Serves 4-6)

Ingredients:

Directions:

  1. Boil the Cauldron: Fill a large pot with lightly salted water and bring it to a rolling, witch-worthy boil. Drop in the spaghetti and stir now and then so it doesn't stick. Cook until tender yet firm - about 12 minutes. Drain and set aside to rest in peace.
  2. Fire Up the Furnace: Preheat the oven to 400°F (200°C).
  3. Conjure the Meatballs: In a medium bowl, toss in all the Eyeballs ingredients (excluding the turkey). Add the ground turkey meat and mix gently. Please don't overwork the mix or it will result in a tough bite. Shape equal-sized "eyeballs" using a cookie scoop or your own hands.
  4. Sear the Spirits: Heat the olive oil in a large skillet over medium-high heat. Brown the meatballs for 3 minutes on each side, until golden like tiny goblins. Transfer them to a baking sheet with tongs.
  5. Bake Until Bewitching: Slide the browned meatballs into the oven and bake for 8 minutes.
  6. Create the Creepy Eyes: While the "eyeballs" bake, slice a black olive in half and carve out a small circle to form a pupil. Cut a thin slice of string cheese to make the "white of the eye." Press the olive piece onto the cheese to complete your gaze-worthy garnish.
  7. Cool the Creatures: Remove the meatballs from the oven and let them cool just enough to handle without a fright.
  8. Assemble the Horror: Drape a few strands of spaghetti around each meatball to form "monster hair." Perch the olive-and-cheese eyes on top. Spoon the remaining spaghetti sauce over your haunted heap and serve your Spooky Spaghetti. Happy Halloween!
