Middle Eastern-Style Shoulder Roast

Ingredients:
For the Lamb
- 3-4 pounds Australian lamb shoulder or leg
- 1/4 cup olive oil
- 1 tsp cinnamon (Grated in a FinaMill Grater Pod)
- 1 tsp nutmeg (Grated in a FinaMill Grater Pod)
- 1 tsp sweet paprika
- 1/2 tsp black pepper (Ground in a FinaMill Pepper Pod)
- 3 tsp coarse salt (Ground in a FinaMill Everyday Pod)
- 6 garlic cloves
- 8 small rosemary sprigs
For the Carrots
- 2 bunches of carrots, washed and trimmed
- 2 tsp olive oil
- 3 Tbsp tahini
- 2 tsp cumin (Ground in a FinaMill Everyday Pod)
- 1 Tbsp honey
- Coarse salt and pepper ground to taste
To Serve
- 1 cup natural Greek yogurt
- 1 1/2 juiced lemons

Directions:
For the Lamb
- Preheat oven to 400°F.
- Grind the spices in the correct FinaMill Spice Pods, mix with olive oil, and rub all over the Aussie lamb.
- Pierce the lamb with small incisions using a knife and stuff with whole garlic cloves and rosemary sprigs.
- Bake for 30 minutes until browned. Wrap the shoulder in parchment paper, then cover with tin foil.
- Reduce oven to 325°F and cook for a further 2 hours until very tender.
For the carrots
- Wash and trim the carrots and mix in tahini, cumin, honey and olive oil and then season with salt and pepper.
- Keep to one side and bake at the 325°F for the last 20 minutes with the lamb.
To serve
- Rest the lamb for 10 minutes before carving.
- Serve with yogurt mixed with lemon juice.
