Maple and Beer Ham

The highlight of many holiday tables is a gorgeous, glazed ham. The large, hearty, and festive nature of this dish makes it a fitting centerpiece for a "celebration of life" and a symbol of abundance during the spring season.
To help you celebrate, this week’s Sunday Supper is shared by our good friends at Maple from Canada. A maple glaze is the perfect partner for ham’s rich, savory, and salty meat. Using freshly ground spices like coriander, peppercorns, and cloves creates a fragrant, complex, and high-quality crust. Check out the tips after the recipe for so many delicious leftovers. Ingredients:
- 5 ½ lbs. smoked ham shoulder (bone-in)
- 1 Tbsp. butter
- 1 clove garlic, minced
- 1 onion, minced
- 1 strong beer of your choice
- 1 cup chicken or beef broth
- ¼ cup + ⅓ cup, divided maple syrup from Canada (preferably dark syrup for its robust flavor if available in your area)
- 3 Tbsp. Dijon mustard
- 2 whole cloves (Grated in a FinaMill Grater Pod)
- 1 cinnamon stick (Grated in a FinaMill Grater Pod)
- 1 tsp. coriander seeds (Ground in a FinaMill Everyday Pod)
- Freshly ground pepper (Ground in a FinaMill Pepper Pod)
Pro Tip: Don't Toss the Bone!
The best part of the holiday ham may just be the leftovers. For rich, unforgettable flavor, don't forget to add the hambone to your next pot of greens. Or dice some ham and use it on a breakfast casserole. You can add ham to a hearty potato soup or slice it for a sandwich at lunch.
Directions:
- Melt butter in a large pot over medium heat. Sauté onions and garlic until softened.
- Add beer, broth, ¼ cup maple syrup, mustard, and freshly ground spices (cloves, cinnamon, coriander, and pepper). Bring to a boil.
- Place the ham in the pot. Cover and simmer for 1 ½ hours or until tender.
- Preheat oven to 400°F.
- Remove the ham from the pot; remove the string from around the shoulder. Also, remove the skin and trim off some fat, if desired, and place the ham in an oven-proof dish.
- Return the pot with the broth mixture to the stove over medium-high heat. Cook until it has reduced by half and thickened into a glaze. Stir in the remaining 1/3 cup of maple syrup.
- Baste the meat with glaze and place it in the oven for 15 to 20 minutes. Baste frequently.
- Carve the ham (unless you have purchased a pre-sliced ham) and serve with your choice of vegetables.
