Crispy Stovetop Potatoes

With St. Patrick's Day around the corner, this week's Sunday Supper is a delicious recipe for Crispy Stovetop Potatoes from Katie Workman, cookbook author, food writer for the Associated Press, and creator of The Mom 100.
Katie created this versatile recipe for our good friends at the Idaho Potato Commission. We love it because it couldn't be easier—you can experiment with different spices you have on hand, and these potatoes pair beautifully with all the traditional St. Patrick's Day dishes like corned beef and cabbage or Shepherd's Pie. Ingredients:
- 2 Tbsp. olive or vegetable oil
- 3 Large Idaho® potatoes, peeled and diced
- Coarse salt to taste (Ground in a FinaMill Everyday Pod)
- Ground Peppercorns to taste (Ground in a FinaMill Pepper Pod)
Optional Seasoning (1/2 to 1 tsp):
- Cumin or Coriander (Ground in a FinaMill Everyday Pod)
- Dried Oregano, Rosemary, Basil, Thyme, or Tarragon (Ground in a FinaMill Dried Herbs+ Pod)
Directions:
- Heat a large skillet over medium-high heat (preferably cast iron or nonstick). Add the oil and let it heat up.
- Season the potatoes with fresh-ground salt and pepper using your FinaMill Everyday and Pepper pods.
- Sauté the potatoes until lightly browned and cooked through, about 10 to 14 minutes. Note: You may need to do this in batches; don't crowd the pan.
- Add your desired spice(s) about 7 minutes into the cooking time and toss/stir the potatoes frequently.
- Remove the potatoes to a plate with a slotted spoon and serve hot.
Pro Tip: Endless Variety
You can transform this recipe to pair with most Italian dishes, like a Skillet Chicken, by adding some basil and/or oregano in the middle of the cooking time. Also, we all know that cheese and potatoes are BFFs—try adding a dusting of Parmesan at the end. Your tastebuds won't complain!
