What do apples, popcorn and ice cream all have in common? They’re perfect with a little caramel sauce! Most of us have had the stuff from the squeeze bottle but nothing can quite match the home made stuff. When you add a little bit of salt it really highlights and brings out the flavor. We’ve made a simple recipe for making your own at home.

• ¼ cup water
• 1 cup sugar
• 2/3 cup heavy whipping cream
• 3 tablespoons unsalted butter cut into 3 pieces
• 1 teaspoon vanilla
• 1 teaspoon salt from FinaMill

1. In sauce pan mix water sugar until thoroughly dissolved and bubbling on medium heat.
2. Increase the heat to high and bring to a boil, stop stirring completely. Let the mixture continue boiling until it turns an amber color, 4-12 minutes.
3. Remove from the heat and slowly whisk in the heavy cream. Carefully watch the mixture as it might bubble quite a bit. Mix in the butter, vanilla, and salt (using FinaMill) one at a time.
4. Pour the caramel sauce into a dish and allow to cool completely, then cover and store in the refrigerator. The sauce should thicken when cooled.

• 2 cups flour
• 1 tablespoon dried minced ground ginger
• 2 teaspoon baking soda
• 1/4 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/2 teaspoon unsweetened cocoa
• 1/2 teaspoon freshly ground cardamom
• 1/2 teaspoon freshly ground black pepper
• 1 cup granulated sugar
• 2/3 cup vegetable oil
• 1 egg
• 1/4 cup molasses
• 1/2 teaspoon grated fresh ginger
• 1/2 cup chopped candied ginger
• 1/4 cup coarse sugar, for rolling (optional)

1. Preheat oven to 350°F and grease your baking sheet, parchment paper is preferred
2. In a medium bowl, whisk together flour, , baking soda, , cinnamon, and cocoa
3. Use your finamill to add the fresh pepper, fresh ground ginger, salt, and fresh ground cardamom
4. In a large bowl, beat together sugar and vegetable oil. Beat in egg, grated fresh ginger, and molasses until smooth. Fold in the flour mixture until well combined, then add in candied ginger.
5. Shape dough into 1-inch balls, roll in coarse sugar if desired and place on baking sheet. Bake 6 to 7 minutes until just set.
6. Let cookies cool for 3-5 minutes on cookie sheet, then remove to a wire rack until cool.

Moist and decadent brownies with a hint of heat to spice things up for Valentines Day! These spiced brownies are halfway between being cake-like fudge-like in texture and have a nice, slightly crunch crust on top and around the edges.

For the Brownies

• 1 1/2 cups unsalted butter
• 12 ounces semisweet baking chocolate
• 6 large eggs
• 1 3/4 cups sugar
• 1 tablespoon vanilla extract
• 1 1/2 cups all-purpose flour
• 1 tablespoon instant coffee granules
• 1 teaspoon salt
• 1 teaspoon ground cinnamon
• 3/4 teaspoon cayenne pepper

For the Topping:

• 1 cup dark chocolate chips
• 1 tablespoon unsweetened cocoa powder
• 1 tablespoon powered sugar
• 1/4 teaspoon cayenne pepper

1. Preheat the oven to 350 degrees F. Melt the butter and baking chocolate together in the microwave or over a double-boiler. Allow to cool. Whisk eggs, sugar and vanilla together. Then once the chocolate has cooled a little, whisk the egg mixture and chocolate together.
2. Stir in the flour, coffee granules, salt, cinnamon and cayenne. Once the batter is well combined, add the chocolate chips. Grease a 9x13 inch baking dish. Pour the batter into the dish and bake for 35-40 minutes.
3. Test the brownies with a toothpick—if it comes out mostly clean, take them out of the oven. The brownies continue to cook a little as they're cooling, but you don’t want them to be overcooked. Allow the brownies to cool completely. Cut into 24 squares. Clean the knife with a paper towel in between cuts to insure the edges are smooth.
4. Mix 1 tablespoon cocoa powder, 1 tablespoon powdered sugar, and use FinaMill to grind 1/4 teaspoon of cayenne pepper together. Using a sifter or small sieve, dust the brownies while they are still in the pan. Then carefully remove them with a spatula.

• 2 vanilla beans, scraped, with pods reserved
• 1.5 cups milk
• 1.5 cups heavy cream
• 6 egg yolks
• 1/2 cup ground rock sugar
• 3 cardamom pods
• 1 stick cinnamon
• ½ teaspoon freshly ground star anise
• 2 teaspoons freshly ground black peppercorns
• 1 teaspoon ground cloves
• A pinch of grated nutmeg
• 1 tablespoon bourbon

1. Heat the milk, cream, vanilla (pods and seeds), alcohol
2. Grind spices with FinaMill and combine everything in a large pot, and simmer for 30 minutes.
3. Whisk egg yolks and sugar, and fold into the warm dairy mixture. Cook until it thickened. Pour through a strainer, and chill in the refrigerator at least 4 hours, or overnight.
4. Load into your ice cream machine and follow manufacturers instructions.
